Recipes like this usually call for bok choy, but we are subbing in these new veggie this week! To turn this into a complete meal, add your favorite protein- chicken, shrimp or tofu would work well!
You can definitely substitute some of these veggies! Use whatever you have lingering in that fridge! Use regular garlic since you’re probably all out of those scapes!
I have never made this! This is a new veggie this year so I had to dig up what I could find, this seems to be a favorite recipe for this vegetable.
Did you see my post in the Facebook group about my favorite cold corn salad? This one is pretty similar. You could also add some finely chopped kale! Don’t even bother cooking the corn!
No need to have all the veggies on hand for this, use what you have! I know it’s summer but soup still remains a favorite exit strategy for this group!
Use this as a side, a dip or on top of tacos! I would consider grilling the corn first, then removing the kernels and making the salad.
