Grated Beet Salad
My obsession this year is grated raw beets! They taste SO different then a roasted beet and I’m loving the crunch!
    Instructions
    1. In a large bowl, combine the vinegar, lime juice, sugar, and a large pinch each of salt, and pepper. Whisk to combine. Gradually whisk in oil.
    2. Add beets, carrots, basil, and parsley. Toss to combine. Taste and adjust for seasoning.
