I’ve said it before and I’ll keep on saying it- one of the best ways to introduce your family to “different” or new veggies is to combine them with a usual favorite. Potatoes is a pretty common one, try adding in some eggplant.
My favorite way to enjoy eggplant is along side tomatoes, this is something a little different to try with the same flavor profile.
A great salad that also be served warm or at room temperature!
Kelly in our group shared this with me last week! Can’t wait to try it! Try topping with fresh basil when they are done cooking! Use a fresh tomato slice instead of sauce for a fresh spin on this recipe.
